I always do supper on Fridays and Saturdays for the FOH/bar team cause they end at 3am. In a way this is a good challenge for me as i usually have to plan the week before when im ordering from suppliers for the next week. I just got promoted to senior CDP, i hope i can push myself to do different dishes.

    Okay guys the recipe is gonna be very rough cause we’re chefs so yeah HAHA

    I use the robocoupe to blend my mirepox
    – carrots
    – garlic
    – white onion

    Saute mirepox in EVOO once translucent saute any sausage meat filling of your choice i chose lamb merguez from my supplier.

    Once the mince is nicely incorporated into the veges tirn up the heat give it colour and let the fond develop

    Deglaze fond with red wine

    Pour in chopped tomatoes or pronto or passata tomatoes

    I blended up pepperoncini picante and spiked my pot with it for a heatier kick

    Reduce until the lamb releases the fat/oil stir occasionally

    Season accordingly i just used abit of salt because the meat did all the work.

    Boil pasta of your choice i reccomend orecchiette because its little bowls to scoop up sauce

    BOOM DONE any questions please ask and im always learning so ill be more thn happy to receive criticism
